Fruit Cookie Cups

 

How did we ever impress our friends and guests before Pinterest? Although I’m half way kidding, Pinterest really has opened the floodgates for endless entertaining possibilities, like these pretty and tasty little fruit cookie cups that I made for a party at my house recently. It wasn’t until after I added my fruit toppings that I realized how Fourth of Julyish this looked. To tone down the Independence Day feel, add other fruit like kiwi or grapes.

 

Ingredients:

1 8oz package of Pillsbury sugar cookie dough
1 8oz package of 1/3 less fat cream cheese, softened
1 tub of light Cool Whip
Fruit of your choice, I used blueberries and strawberries

Directions:

Preheat oven to 350 degrees
Lightly grease a mini muffin pan
Roll the cookie dough into small circles
Place them in pan and mold them either using our thumb or a pestle
Bake for about 7 minutes
Remove from oven and cool
Chop fruit, if necessary

Meanwhile, mix the Cool Whip and cream cheese using a mixer. It won’t be that sweet, but don’t worry, the cookie and fruit will add sweetness.

Once the cookies have cooled, spread the cheese and cream mixture on the cookie and top with fruit. Use any remaining cream mixture for fruit dip. Alternatively, some people have just used strawberry cream cheese for the cream topping.
