Cajun Sweet Potato Fries

Not only are sweet potatoes loaded with vitamins but they really hit the spot. I usually enjoy them mashed with cinnamon but this time I decided to kick it up a notch by adding cajun seasoning and baking them in the oven. They were the perfect side dish with a low fat homemade steak sub.

 

What you need (Serves 2)

2 medium sweet potatoes
1 tsp salt
1 tsp pepper
1 tsp cajun seasoning

 

What you need to do:

Preheat oven to 425
Wash potatoes
Cut into medium size wedges
Soak in cold water for 30 minutes
Drain water
Place potatoes in a baking sheet covered with foil and sprayed lightly with Pam
Sprinkle salt / pepper/ cajun seasoning on potatoes
Bake for about 15 minutes then turn them over
Bake for another 30 minutes or so
