Arabic Fried Tomatoes (Bandoora Maqliya بندورة مقلية)

I love tomatoes. I love them so much I snack on them the way people snack on an apple. I usually just eat them with salt and pepper or will mix them with olive oil and onions for a tomato salad. As much as I enjoy them fresh, there’s something that happens to the flavor and aroma of a tomato when it’s fried. Bandoora Maqliya, literally translates to fried tomatoes in Arabic and is a mouthwatering traditional dish that anyone can make.

What you need:

3 large firm tomatoes, sliced
Salt
Pepper
Parsley flakes
1 small jalapeno pepper chopped
4 garlic cloves crushed
2 tablespoons olive oil
Pita bread
I like to add my own seasonings like herbs d’provence and oregano for added flavor.

What you need to do

Heat oil in skillet
Season tomatoes
Place in skillet
Add peppers and garlic
Flip tomatoes over
Cook until tomatoes are soft but not mushy
Serve with crispy pita bread
