This is one of my favorite things to make when the weather is warm because it’s easy, light, and yet extremely filling. I usually make it for one and eat it as a main meal but this is a great party food or side dish. If you’re making this for a large group, just double or triple the recipe.
What you need (serves one):
1 medium avocado
1 cup cherry tomatoes
1/2 medium onion
1/4 cup lemon juice
salt & pepper to taste
What you need to do:
Peel and cut avocado into cubes
Chop onion
Place tomato, avocado, and onion in bowl
Add lemon juice, salt and pepper. Add more to achieve desired taste
Weight Watchers points: 8 (if using a 6.5 ounce avocado)
