My sister wanted to give something practical and useful as a wedding favor so she decided on this delicious Curried Lentil Soup recipe. If you read this post on the traditional Middle Eastern lentil soup recipe that I learned from my mom, you already know that I love lentil soups, but the curry in this recipe really takes things up a notch. This soup is such a wonderful comfort food and is very filling. I recommend it whether you’re thinking of giving it away as a favor or not!
What you need
We split the Good Housekeeping recipe in half. This makes about 4 cups.
In bottom of each glass jar,
place 4 ounces red lentils
1/2 tablespoons dried onion
1 tablespoon curry powder
1 teaspoon garlic powder
4 ounces green lentils,
1/4 cup apple pieces,
and 1/2 tablespoon parsley, in that order.
What you need to do:
Place ingredients in a saucepan.
Add 3 1/2 cups water
Heat to boiling on high
Reduce to low, cover and simmer for 20-25 minutes
Add salt and pepper to taste
